19 – Soy Sauce Rice Eaten in the Studio on a Day Off

I poured a spoonful of each oil and heated it on low heat.
I put thinly sliced green onions on the frying pan as it began to heat.

The key is to infuse the oil with enough green onion scent.
It will add a subtle umami flavor even without special seasoning.
Garlic would add a deeper flavor, but there was no garlic in the fridge at the moment.
When the green onion smell rose from the gently cooking oil, I cracked two eggs onto it.
The eggs nestled in between the cooking green onions.
Sizzling.
The transparent egg whites turned white as they cooked and bubbled in the oil.
The oil bubbles popped! Popped! AND fried the egg whites.
It’s important to cook them like frying because of the generous amount of oil.
This way, the umami flavor comes alive a little more than regular egg rice.
The texture changes ever so slightly.
I added soy sauce to the eggs and green onions cooking on the oil.
Just two spoons.
It was a suitable amount for seasoning.
Gently stirring the soy sauce, eggs, and cooked green onions on low heat would also be nice, according to your preference.
“Egg rice should always be soft-boiled.”
The fresher the egg, the more special this soft-boiled taste becomes.
I liked to cook them until the yolk flows out and coats the rice when pressed with a spoon.
If the eggs aren’t fresh, it’s better to eat them fully cooked, but otherwise, soft-boiled is the best.
Sizzling.
Having confirmed that the egg whites were all cooked by the heat of the frying pan, I turned off the heat and opened the rice cooker.
Steam rose from the freshly cooked rice.
Feeling the hot steam of the freshly cooked rice, I scooped a large serving of rice into a bowl.
“Perfect, sticky rice.”
The rice was just right – not too mushy nor too dry.
After scooping the rice into the bowl, I added the completed soy sauce fried egg.
“Nice, with the egg and soy sauce oil.”
The green onions, filled with the brown soy sauce and oil, and the perfectly-cooked egg whites, with the yolk still soft, were placed on top of the steaming rice.
The reason I didn’t mix the eggs with the soy sauce was thanks to these green onions.

“This will be delicious.”
When I’m feeling lazy, it’s soy sauce and egg rice.
It’s simple, easy, and doesn’t require many dishes to wash.
If there’s no hot rice and only cold rice, a quick stir-fry will still make it a perfectly delicious dish.
I popped the soft yolk.
The thickly flowing yolk mixed with the brown soy sauce and green onion oil.
The yolk and soy sauce onion oil painted the white rice in their respective colors, giving off a pleasant aroma.
“Mmm~.”

This fragrance.
That’s why I eat soy sauce egg rice.
“I need some kimchi too.”
After mixing everything, I placed the previously prepared kimchi on top of the rice mixed with egg and soy sauce.
